Flavours are just our bodies way to make sense of different chemicals. Plants can make so many different checmicals from different building blocks, that the falvour just depends on what chemicals the plant is expert at making!
It is a very complicated thing because is taste is pretty subjective, but grape growers who make wine talk about how soil moisture and levels of minerals affect the taste of the wine. It isn’t unthinkable that nutrients in the soil could affect plant gene expression (and then what products the plant makes as James’ answer says) and ultimately how something tastes.
